justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">有人說蔬果要用白醋、小蘇打或鹽水來清洗，企業也看見其中商機，推出蔬果清潔劑產品，網路上更是充斥著各種洗菜偏方與恐嚇式訊息，到底什麼方法才能真正把蔬果清洗乾淨呢？農藥真的那麼可怕嗎？\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">「其實農藥是洗不掉的！」面對這些疑問，著有暢銷書《正確洗菜，擺脫農藥陰影》、長年研究農藥與環境毒物的權威學者——台灣大學農業化學系教授顏瑞泓一語道破。\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">他指出，有一部分農藥屬於「系統性農藥」，會被植物吸收進入整株組織內，無論怎麼洗都無法完全去除；清洗蔬果的目的，更多是為了去除灰塵、微生物污染與其他食安風險，而不是追求「零農藥」。\u003C\u002Fp>\u003Cp>&nbsp;\u003C\u002Fp>\u003Ch2>農藥人人聞之色變，為何還要使用？\u003C\u002Fh2>\u003Cp>&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">「很多人一聽到農藥，就聯想到劇毒。」顏瑞泓說明，農藥並非單一物質，而各式各樣保護農作物生長並穩定產量的化學物，範圍非常廣泛，有些毒性很強，有些甚至比洗碗精還要無毒，「農藥沒有想像中可怕，像家庭中常接觸到的蚊香也是農藥的一種。」\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">顏瑞泓進一步解釋，蔬果等作物在田間栽種，一定會遇到生病啦、蟲咬啦，或是被雜草搶了養分和陽光的狀況；況且消費者總會挑選外表美觀的農產品。為了減少損失、增加收穫量並保護外觀，必須使用農藥且達到一定劑量，才能達到防治的目的。\u003C\u002Fp>\u003Cp justify;\">既然農藥的使用無可避免，又沒辦法完全洗掉，那只能把農藥吃下肚了？顏瑞泓告訴我們不必擔憂，絕大多數的農藥在作物上殘留的量極低，檢驗單位在訂定安全標準時，都是用最嚴苛的假設來估算的。\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">就拿草莓來說，一般認為草莓農藥殘留特別高，其實殘留的許可量是用「一輩子每天都吃」的情況來估算，長期累積、慢性暴露的風險都被納入考量。\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">破除這些關於農藥的迷思，讓消費者對農藥甚至台灣的農業有更正確的認識，也是顏瑞泓寫下《正確洗菜，擺脫農藥陰影》一書的初衷。\u003C\u002Fp>\u003Cp>&nbsp;\u003C\u002Fp>\u003Ch2>蔬果怎麼清洗才乾淨？用清水就夠！\u003C\u002Fh2>\u003Cp>&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">此外，很多民眾認為「被蟲咬過的菜代表沒有使用農藥，吃起來才安全」，真的是這樣嗎？顏瑞泓提醒，外觀稍有蟲咬或瑕疵的蔬果，確實可能是因為較少使用藥劑保護，但並不等於完全沒有農藥。\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">有些情況是農藥藥效已退，害蟲才再次啃食；或是害蟲已產生抗藥性，也有可能是被蟲咬了以後農民才灑藥的。因此，「有蟲咬」並不是安全保證，反而更需要確實清洗。此外，被蟲咬過的地方也要切除，且不建議生食，以免黴菌、細菌、病原體等感染造成食物中毒。\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">那麼蔬果到底應該要怎麼清洗呢？顏瑞泓揭露，最有用的不是任何清潔用品，而是「大量流動的清水」！使用小蘇打、醋、鹽等來清洗，清除農藥的效果並不顯著，而使用蔬果清潔劑來清洗後，仍要用水沖走化學清潔劑，用清水反而簡單又直接。\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">顏瑞泓進一步說明，附在蔬果表面的農藥多為脂溶性，鹽水不能有效溶解脂溶性化合物。其次醋是酸性，反而會增加殺蟲劑的降解時間。而浸泡清水的時間則不宜過長，否則農藥會更容易滲透到蔬果中，還會令水溶性維他命流失。\u003C\u002Fp>\u003Cp>&nbsp;\u003C\u002Fp>\u003Ch2>台灣食安問題多？其實是因為檢驗更嚴格\u003C\u002Fh2>\u003Cp>&nbsp;\u003C\u002Fp>\u003Cp style=\"text-align: justify;\">不少民眾質疑，為何台灣的農藥容許量常與日本、歐盟不同？顏瑞泓強調，國際接軌指的是「評估方法一致」，而非「數值完全相同」。因為各國栽培的作物不同、病蟲害不同，甚至飲食習慣也不同，風險評估的結果自然不會一樣。\u003C\u002Fp>\u003Cp style=\"text-align:
